My husband and I have long been fans of Madeira wine. We have visited wineries in Funchal, Madeira, and tasted samples that are over 100 years old. We love the drink and frequently serve it to guests with dessert. So, it was with some amusement that I found in the wine making book of my paternal grandmother, Helen S. Wright, a recipe for Madeira wine.
In the words of my grandmother:
To five gallons prepared cider, add one half ounce tartaric acid, one-half pint spirits, one-half pound loaf sugar. Let it stand ten days, draw it off carefully, fine it down, and again rack it into another cask.
