This recipe comes from my childhood and I look forward to having it every year when the tomato plants are producing more tomatoes than anyone thinks they can eat. Honestly, it allows everyone to gorge on tomatoes and is always a hit with people who like tomatoes. It is very easy and can be made with fresh or dried basil; the taste is different but good either way. Serves 4 (if I am not present)
Ingredients: (These are very approximate; you can alter everything to taste):
8 large tomatoes peeled and cut into bite sized pieces (if you are OK with skins skip the peeling.)
½ medium red onion
2 tablespoons olive or vegetable oil
20 leaves fresh or 1 teaspoon dried basil
salt and pepper to taste
Directions:
Mix all the ingredients in the order listed and serve. A lot of juice and onions remain in the bottom of the bowl when the vegetables have been eaten and I love to slurp it up when everyone is done and no one is around. Yummm.
I make a version of this using our fresh tomatoes but leave out the onions, add chunks of mozzarella and black olives. So great!
